Ingredients

  • 1 cup salted butter, softened
  • 1 cup maple sugar
  • 1 cup coconut sugar
  • 2 teaspoons pure vanilla extract
  • 2 large eggs
  • 2 cups rice flour
  • 1 cup Heart & Soil Animal Based Protein
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon sea salt
  • 1 Hu Kitchen dark chocolate bar, chopped

  1. Cream the butter and sugars. Beat the softened butter with the maple sugar and coconut sugar until the mixture turns pale and fluffy, about 2 minutes.
  2. Add the wet ingredients. Mix in the vanilla extract, then the eggs one at a time. Scrape the bowl between additions so nothing sits unmixed at the bottom.
  3. Combine the dry ingredients separately. Whisk the rice flour, Animal Based Protein, baking soda, baking powder, and sea salt in a second bowl. This is the step most protein cookie recipes skip, and it is why their protein powder clumps once it hits the wet mix.
