Nothing beats an American summer when the weather is fine and there’s a 2-inch-thick ribeye on the grill.

Whether you’re firing up charcoal today or tomorrow, here are 5 steak facts to carry you into the season:

Steak Fact #1
Once on the grill, a steak must be treated like a wild animal and handled as little as possible.

Flip once. Use tongs, never a fork.

A fork steals those juices. And you worked too hard (and paid too much) to let that happen.

Steak Fact #2
The thicker your steak, the lower your heat.
High heat on a thick cut will char the outside before the inside ever catches up. Patience wins here.

Steak Fact #3
The most popular day to eat steak in America is Memorial Day. July 4th and Labor Day round out the top three.

Lucky for you, with an animal-based diet, every day qualifies.

Steak Fact #4
On average, a cow is only about 40% steak.

The rest is the organs, the collagen, the marrow. The most nutritious parts, eaten by humans since forever until we decided to only eat muscle meat.
